Zucchini soup



Zucchini is one of my favorite vegetable, quick and easy to prepare.

4 smaller zucchinis
1 tablespoon lard
1 large onion
1 bell pepper or 4 mini peppers
2 small tomatoes
1 big or 2 small cloves of garlic
1 cup unsweetened coconut milk or cream
Spices: salt, black pepper, marjoram, Hungarian paprika (2 tea spoons)

Peel and grate the zucchinis and mix them with 1 tablespoon salt. Let them rest for at least 20 minutes, than squeeze them out. Dice the onions, peppers, tomatoes.
Heat the lard in a pot and steam onion, peppers and tomatoes (stew base). When softened add spices and chopped garlic. Add zucchinis and mix it well with the other ingredients. Pour the coconut milk, cover it and steam until the zucchinis soften. Serve it with hamburger patties.
