Bacon wrapped chicken liver with dried plums
I still trying to convince you to eat liver! Organ meats are important part of paleo diet, so please at least give it a try :) This receipt is great for a quick meal or as appetizer.
Wash and cut the livers in 2-3 pieces. Put a plum onto the liver and wrap it in bacon than secure it with a toothpick. Line up in a casserole and bake it covered for 15-20 minutes on 350°F. Take off the cover and broil it for another 5 minutes. Serve it with fresh salad.

Paleo quiche
It was a really good idea to buy this mini-casserole pots at TJ MAXX : ) Since than I have baked this easy-meal in many different variations. It is only depends on fantasy and a great way to use up leftovers!
The pictures show a pumpkin-chicken breast variation.
For 4 servings:
8-12 pieces of per-baked, thin pumpkin or butternut squash slices (or 1 cup raw squash cut in small cubes)
1/2 lbs chicken breast cut in 0.5" pieces
1 onion sliced
1/4 lbs bacon chopped
2 eggs
1/3 cup paleo milk
spices: salt, pepper, nutmeg, parsley
Parmesan cheese (optional)
Heat oil in a pan and stir fry onion, bacon and chicken breast. Add spices to taste. In the case of using raw squash, first cook it with onion and bacon until soft before adding the chicken breast. Grease the casserole pots. If you have squash slices lay them at the bottom of the pots. Divide the onion-meat-(squash) mix equally among the pots. Mix the eggs with the milk and spices and pour equal amounts on the pots. Scatter them with Parmesan cheese and bake on 350°F for 20 minutes. Broil it for another 5 minutes to toast the cheese.
Paleo seed-mix bread
I have been baking this bread since I become "paleo". I have already tried it with different kind of seeds and it is always taste great.
1/4 cup flaxseed meal
3/4 cup almond meal flour
1/3 cup sesame seeds / chopped pumpkin seeds
1/3 cup chopped sunflower seeds / hemp seeds
1 teaspoon baking soda
2 tablespoon melted coconut oil
3 eggs
1/4 cup water if the dough is too thick
spices: salt and a hint of caraway / turmeric / oregano
Separate the eggs and beat up the egg whites. Mix the yolks with the coconut oil until frothy. Mix the seeds,flours, baking soda and spices. Add the yolks-oil mixture into the dry ingredients. Add a little water to it if it is too hard to stir. Add the egg whites and slowly mix them into the dough until smooth. Pour in a greased silicone bread pan and bake it in a 350°F preheated oven for 45-50 minutes. Make a toothpick test!

Paleo Apple Tart
I've found this recipe on Elena's page. (http://www.elanaspantry.com/paleo-apple-tart/)
I only changed a couple things :)
I used the juice of a whole lemon and added 2 tablespoons of honey. I put one layer from the apples on the crust and baked it covered for 30 minutes. I blended the leftover apples and added ~2 tablespoon of coconut flour, so I got a thick applesauce. After I had baked the tart covered for 30 minutes I spread the applesauce over it and baked until the crust became brown. Delicious!!!

Coconut-ginger chicken soup
Stomach-heather Asian style chicken soup:
1 leek
2 small carrots
3 celery sticks
1/2 chicken breast (cut in 1 inch cubes)
1/4 lbs chicken liver (cut in 2 inch pieces)
2-3 teaspoon softened creamed coconut ("Let's do Organic" brand)
1-2 teaspoon ground ginger
salt, Hungarian paprika (to add color)
1,5 quart water
Heat some oil in a pot. Add the veggies and the chicken breast and stir them until brownish. Add spices and water, than shimmer the soup until the carrots are half softened. Mix in the coconut cream and add the liver pieces into the soup. Cook for another 10 minutes.

Cooked beef tongue
I know, this is not a usual dish, but you have to believe me: it is delicious! It has a unique,soft, real meat taste. You have to try it.
1 beef tongue (I ordered at Goose The Market)
1 celery root
1 parsnip/turnip
2 carrots
2 cloves of garlic
1 onion
~10 peppercorns, 2 bay leaves, salt, nutmeg
1 cup white wine
Wash the tongue and peel the veggies. Put the ingredients in a cooking pot. Add as much water as many covers the ingredients. Shimmer it for 2,5 hours. Take out the tongue from the bouillon and peel off the thick, grayish skin. Cook the tongue for another 1 hour, than let it get cool in the bouillon. Slice the tongue, put it into a bowl. To save it for later: filter the bouillon and pour it on the tongue. You can eat it as an appetizer (serve it with salt and Hungarian paprika), with salads or put it into your sandwich.
Pour the leftover bouillon in freezer bags and put in the freezer. Good base for other soups like my pumpkin-carrot soup.

1 banana
2 eggs
3 tablespoon melted coconut oil
1/4 cup water
1/2 cup almond flour
1/2 cup chopped walnut
3 tablespoon cacao powder
1 tablespoon coconut flour
1 teaspoon baking soda
2 teaspoon Truvia
Blend banana, eggs, coconut oil and water. Mix the dry ingredients together in another bowl.
Combine the liquid and dry ingredients. The dough shouldn't be runny.
Cover a baking sheet with parchment paper. With a teaspoon place small portions from the dough onto the baking sheet.
Put dried plums on the cookies and bake it in a 350°F preheated oven for ~15 minutes.

Brussels sprouts casserole
2 pounds Brussels sprouts
1 pound ground meat ( I prefer pork)
1 onion
1 clove of garlic
1 bell pepper
salt,pepper, Hungarian paprika (1 tablespoon)
Sauce: 2 egg (only 1 if you doesn't want to have to thick sauce) 1 cup coconut milk, 2 tablespoon mayo, salt, pepper, nutmeg, Parmesan cheese (optional)
Prepare the sprouts as directed in the oven roasted Brussels sprouts recipe.
Dice the onions and the pepper and sauté them in a pot over heated oil. Add the meat, salt, pepper, garlic and Hungarian paprika, and stew the meat until it softens.
In a casserole put one layer of sprouts, than the stew and another layer of sprouts on top of it.
To make the sauce, mix all the ingredients and pour it on the layers.
If you want to add more flavor to the dish, put some bacon slices atop.
Bake it on 360°F for about 20 minutes.

Oven roasted Brussels spouts
In my childhood I hated this mini cabbage. Than I've found a recipe on the net, and since then Brussels spouts become a hit in our family!Great side dish with meat and fish too.
1 pound Brussels sprouts
~1 cup orange or grapefruit juce
1 teaspoon mustard
1 tablespoon olive oil
salt,pepper
Remove the outside leaves from the spouts and cut them half. Mix the other ingredients.
Spread the sprouts in a pan and pour the sauce on. The spouts should be at least half covered by the sauce.
If you have time, let the sprouts rest in the sauce for hours, shaking together once in a while.
Cover it and bake in the oven for 30 min on 380°F. Remove the cover and broil it until brown.

Pumpkin-carrot soup
Here is delicious soup in honor of Halloween :) Perfect for chilly nights.
(2 serving)
1 cup pumpkin puree
2 cup bouillon
2 large carrots
1 onion
Spices: salt, pumpkin spice (~ 1-2 teaspoon), honey (optional)
2 tablespoon coconut cream
roasted pumpkin seeds
pumpkin oil
Brown the diced onion with the sliced carrots. Add bouillon and spices than simmer until the vegetables soften. If you like it more creamy blend the soup before adding the pumpkin puree and the cream.
Serve it with roasted pumpkin seeds and pumpkin oil.
(2 serving)

Butternut squash casserole
Halloween and squash season is here! I wasn't a big fan of squash, but in the past couple days I made really good squash dishes. Here is one of them:
1 medium butternut squash
2 hard boiled eggs
1 large onion
sausage, bacon as much as you want
Sauce: 2 egg (only 1 if you doesn't want to have to thick sauce) 1 cup coconut milk, 2 tablespoon mayo, salt, pepper, nutmeg, Parmesan cheese (optional)
Slice the squash into round, thin slices. Bake them in the oven (375°F) for about 15 minutes.
Cut the bacon, sausage, onion in slices and sauté them in a pan until onion softens.
In a buttered/oiled casserole lay half of the squash slices, than the sliced boiled eggs and onion-bacon mix.
Cover it with the other half of the squash slices.
Mix together the ingredients of the sauce and pour over the pile.
Put in the preheated oven (375°F) and bake it covered for about 20 min than broil it for 5 min.

Sautéed chicken liver / Liver paté
I know, for Americans eating organs sounds strange. Although liver is really tasty and loaded with vitamins. It is high in cholesterol too, but after reading researches now I know it is not a problem :). It can be well combined with vegetable dishes.
1 pound chicken liver cut in ½ inch slices
1 large
onion chopped
Spices: salt,
black pepper, marjoram, Hungarian paprika (1 teaspoon)
1 table
spoon lard
Heat lard
in a pan and steam onions until soften. Add spices and livers.
Cover and sauté the livers until get a brownish color and doesn't bloody anymore. Do not overcook because it hardens.
From the leftover prepare Liver Paté.
In a food processor mix the liver with 1 boiled egg or 1/2 avocado, 1/2 diced onion, mustard, marjoram. Add spices to your taste.

Zucchini soup
Zucchini is one of my favorite vegetable, quick and easy to prepare.
4 smaller zucchinis
1 tablespoon lard
1 large onion
1 bell pepper or 4 mini peppers
2 small tomatoes
1 big or 2 small cloves of garlic
1 cup unsweetened coconut milk or cream
Spices: salt, black pepper, marjoram, Hungarian paprika (2 tea spoons)
Peel and
grate the zucchinis and mix them with 1 tablespoon salt. Let them rest for at
least 20 minutes, than squeeze them out. Dice the onions, peppers, tomatoes.
Heat the
lard in a pot and steam onion, peppers and tomatoes (stew base). When softened
add spices and chopped garlic. Add zucchinis and mix it well with the other
ingredients. Pour the coconut milk, cover it and steam until the zucchinis
soften. Serve it with hamburger patties.
