Halloween and squash season is here! I wasn't a big fan of squash, but in the past couple days I made really good squash dishes. Here is one of them:
1 medium butternut squash
2 hard boiled eggs
1 large onion
sausage, bacon as much as you want
Sauce: 2 egg (only 1 if you doesn't want to have to thick sauce) 1 cup coconut milk, 2 tablespoon mayo, salt, pepper, nutmeg, Parmesan cheese (optional)
Slice the squash into round, thin slices. Bake them in the oven (375°F) for about 15 minutes.
Cut the bacon, sausage, onion in slices and sauté them in a pan until onion softens.
In a buttered/oiled casserole lay half of the squash slices, than the sliced boiled eggs and onion-bacon mix.
Cover it with the other half of the squash slices.
Mix together the ingredients of the sauce and pour over the pile.
Put in the preheated oven (375°F) and bake it covered for about 20 min than broil it for 5 min.
